This process gives a possibility to concentrate product, i.e. to remove the part of water from the food product. This will enable to preserve the food, raise a total solids content, decrease its weight and thus reduce transportation, storage and distribution costs.

• Reverse osmosis is lead thanks to higher pressure used in membrane with opposite direction than the natural pressure in the system. The advantage is a low energy consumption necessary for this process.
