Electrodialysis is an electro-chemical separation process where the ions pass through an ion exchange membrane by means of the direct voltage. There is an effect of anions and cations migration in the direction of the corresponding electrodes under constant voltage, due to the relatively high content of dissolved salts in the cheese whey. When the ions are removed from the solution this becomes demineralized step by step up to the desired level.

IS THE FINAL PRODUCT?

  • In order to evaluate a final demineralization effect by use a ED technology despite of the minerals content, is a final microbiological quality of the whey or permeate. Demineralization process cannot have a negative influence on the quality. It’s important as the powders finally produced are used in baby and infant food production, where the quality standards are strictly observed. Therefore we recommend to implement a constant methods among the others available on the market. In these processes a microbiological quality change is very little due to the very short time of product processing in the ED plan in compare to the systems running in periodical way.
